Barrel Aged Cherry Sour [7.7% abv] 10IBU

Our first ever wine barrel aged sour! Unlike our typical fruited sours that are produced within a matter of weeks, this beer was brewed in January of 2017, fermented with our house mixed culture, and then transferred into California Cabernet Sauvignon barrels with a fresh pitch of Brettanomyces (TYB 187 from The Yeast Bay to be exact) for 14 months before adding Montmorency tart cherry puree into the barrels and aging ontop of the fruit for an additional 9 months before being traditionally bottle conditioned for an additional 9 months. This is a hugely complex sour with notes of oaky vanilla, cherry blaster candy, lemon peel, and a crisp mineral finish. This beer can be enjoyed now, or cellared for years to come.
